What's the difference in cost from one to two?

horses? Is it exactly twice as much or are there costs that can be split? Would a feed store give a discount for ordering more feed? I have the opportunity to acquire one or two (mother and her colt) in the summer and need to know the cost difference.

With two animals of roughly the same age and size there would be places you could overlap costs, such as tack, but with two animals of a different age and needs it would most likely double it. A colt has a growing body and requires more food and tack that grows with him. Most feed stores don't offer bulk discounts on a scale that small. For a barn with 10+ they might deliver for free, but you don't want to buy so much food it goes bad before you can use it.
