Question about not behaving

Are there certains things a horse can do to show that there is an underlying issue at hand? As an example, when a baby is tired they pull on their ears, so you know they are sleepy. Do horses do certain types of things that will lead you to know exactly whats going on with them and if so, what are some?

Putting back their ears and swishing their tail normally means they are unhappy. Amusingly most dressage horses shown at higher levels do this when being ridden. Makes you wonder if the fancy riders really know their stuff sometimes.

Or if they really care at all about the horse being unhappy. That's the argument I hear most often about horse riding; that the horse is happy so it's ok. Well in this case it would seem not.
