They check teeth so that you know the horse is as old as it's supposed to be, and that they are aligned well and not causing problems. Also conformation and lameness- because you don't ride lame horses. I think the Vet would notice other things too that you may not have been aware of.

A vet will be able to assess whether the the horse is sound. They can also tell whether the horse has a history of laminitis because obvious ridges appear on the hooves. They also need to make sure the horse matches its identification - you need to know that you're buying the right horse and that it isn't stolen.
