We normally let the person who the pet was acquired for name the pet. It could be based on their personality, coloring, birthday, etc depending on how it goes.
Example: coppernicus was a green/blue beta (copper oxidizes that color) dusty was a fuzzy grey cat my dad threatened to use as a duster |

I have sometimes done that with names for smaller animals. I have had a cat named Kitty that after we thought up so many names Kitty ended up fitting her better than the others. I'm not sure how that name would work for a horse, but I do know someone with a dog named that.

I was raised on a farm and grew up with three horses in my lifetime. One was a beautiful red & white mare named Ribbon simply because she looked shiny like a ribbon. We also had a Palamino horse named Prince that my Dad named just because he liked that name. Finally we had a pretty little black and white Apaloosa mix named Duchess because Dad said she was too young to be a Queen.(:
