I was going to suggest 4H because they are not only good with horses, but they are good with young humans too.
You could try contacting some stables, especially ones that work with younger riders, to come and give an assembly. What sorts things were you wanting to have them learn? Animal care? Riding?

I imagine any place that allows children would be able to come out for some school teaching, but not all horse related topics would work well in a school wide assembly type environment. Depending on what exact equine topic you're looking for 4-H or Pony Club would be the most likely candidates. Also try contacting the local Scout groups about places they may have gone to complete equine related badges (I know Girl Scouts has one).

I know that most children at our schools have horses and animals. Most of us all live on farms and if teachers ask many of us would be willing to come down and talk about animals. If you live in the city more I am not sure who you could talk to besides 4H maybe.

Perhaps college students could help
As I mentioned in my intro, my oldest daughter is working on her bachelor's degree in equine science - she is a "TA" (Teacher's Assistant) and part of her required 'field' work is to provide instruction to kids - proper care of horses as well as riding lessons. Perhaps other places could check with their local universities that have equine degree programs and see if such an arrangement could be made.

In our school system we a group of high school students that are in the FFA club that goes and speaks to elementary and middle school students. I think this is great! They not only teach them about the proper care of livestock like horses, cattle, and pigs, but they also help educate the younger students about the proper way to raise crops. Then if those younger students are still interested, they can join the FFA club when they go to high school.

FFA and 4-H and Pony Club are your best bets if you don't live near a barn or University with equestrian facilities. Many private barns are more than willing to teach students about horses (unless they're one of those snooty adult only barns) if you only ask them. I know I did lectures and hands on show-and-tells with 4-H for years.

When I was in the Girl Scouts there was a man in town who still did some shoeing for people in the area that had horses. He still had the original barn that he had when our town was first founded and he used to participate in horse and buggy races on main street with our now retired town sheriff. We enjoyed going to the barn and seeing his tools and seeing pictures and trophies of the races and horses that he had raced back in the day.
