Another feed question

I was buying some grain for my horse today (alfalfa) and the fellow working the truck was saying that horses need fresh uncut grains, especially in the winter. Said there were nutrients in the roots that were important... Now, I've NEVER seen a horse pull up grass and eat the roots while grazing. Do you think this guy was blowing smoke?
